The pictures on the wall are also worth studying, all are handpicked for each room and thoughtfully placed. Guests are able to utilize the fully-equipped gym, Nimb Wellness Spa and the exclusive roof terrace created for your enjoyment and relaxation. Jump in the emerald green pool and swim against the built-in tide or lounge away your time with a spectacular view of Copenhagen and Tivoli Gardens.
But it is Gemyse that is the hotel’s true gem, where they promise you meals full of intense taste and new combinations. Every single plate that is put on the table is an experience in itself. Guests rave over the crisp salad with yellow mustard seeds, carrot tartare, shredded chestnut, pickled green tomatoes, parsnip chips, kimchi and honey, as well as the corn puree made from grilled baby corn, grilled regular corn and corn chips. Favorites are also the baked butternut squash stuffed with pumpkin, goat cheese, nuts and seeds roasted in herbs; potato ribbon with fresh cheese and crispy polenta; pot-roasted leek with buckwheat and wild garlic; and Norwegian lobster with chorizo and parmesan. As a finale the caramelized popcorn topped with a fabulous vanilla ice cream is the perfect ending.
Fresh local vegetables are the key to Gemyse’s outstanding dishes. Therefore they cooperate closely with Aarstiderne, a company specialising in organic produce to ensure high quality and sustainability at the same time. It goes without saying that all of their vegetables are 100% organic and their aim is for everything served to be as natural as possible. For Mette Dahlgaard Jensen, Head Chef at Gemyse, sustainability is also about respecting the identity of the produce, as she quotes “When you are working with organic food, think about using everything and not only a little of the vegetable.” Chef Mette has developed a unique vegetarian style, which puts vegetables firmly in the spotlight with an emphasis on seasonal, organic produce from local farmers or the restaurant’s own plot of land.
Large windows overlook the restaurant garden, where guests can cook their own dough twists, popcorn and marshmallow on the fire pan. Gemyse is the place that pairs reason and sensuality. Guests are free to meander with the peacocks through urban kitchen gardens before sitting down to dinner.
